Khichuri/ Khichdi

 

Ingredients:

  • 250 gms. Basmati rice or Scented rice
  • 250 gms. mung dal
  • 150 gms boiled vegetables (potato, cauliflower, beans, tomato etc.)
  • 2 tablespoon mustard oil
  • 1 teaspoon cumin seeds
  • 1-2 bay leaf
  • 2-3 red dry chili
  • 2 teaspoon ginger paste
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • Salt & sugar according to taste

Preparation:

  1. Wash rice & dal in two different pan.
  2. Boil the rice .
  3. When rice becomes half cooked then add the dal.
  4. Now rice & dal are prepared, and keep aside.
  5. Heat the oil in a pan & add cumin seeds, red dry chili, bay leaf,
  6. Then add ginger paste.
  7. Add the boiled vegetables & sauté with this spices.
  8. Mix this mixture with rice-dal preparation, also add turmeric, cumin, coriander powder.
  9. Add salt & sugar according to taste.
  10. Kichuri is prepared. Serve it hot.

 

 

Dalia Khichuri


Ingredients:

  • 150 gm Dalia
  • 150 gm Lentil or Mung dal
  • 100 gm boiled mixed vegetables (potato, capsicum, cauliflower etc)
  • 2 tomato (cut into medium size)
  • 2 onion (chopped)
  • 2-3 green chilli (chopped)
  • 1 bay leaf
  • 1 dried red chilli
  • 1-teaspoon cumin seeds
  • 1-teaspoon turmeric powder
  • Salt & sugar according to taste
  • 3 tablespoon mustard oil
  • 3 tablespoon Ghee (clarified butter)
  • 2 cup of water

Preparation:

  1. Fry the dalia in a hot pan (without oil) and keep aside.
  2. Boil the Lentil or Mung dal & keep aside.
  3. Heat the oil in a pan and fry the pre-boiled vegetables & keep aside.
  4. Heat the ghee in a pan, sauté the cumin seeds, dried chilli & bay leaf.
  5. Add onion and green chilli and stir well.
  6. Add pre-fried dalia, vegetables, dal and tomato & mix well.
  7. Give the turmeric powder, salt & sugar according to taste & stir well.
  8. Add water and cook for 10 min in a low flame with cover.
  9. Dalia khichuri is ready, serve it hot.

 

Sabudana Kichuri

 

  Ingredients:

  • 150 gm Sabudana (big) (soak into water for 2 hours)
  • 150 gm Mung dal
  • 100 gm boiled mixed vegetables (potato, capsicum, cauliflower etc)
  • 2 tomato (cut into medium size)
  • 2-3 green chilli (chopped)
  • 1 bay leaf
  • 1 dried red chilli
  • 1-teaspoon cumin seeds
  • 1-teaspoon turmeric powder
  • Salt & sugar according to taste
  • 3 tablespoon mustard oil
  • 3 tablespoon Ghee (clarified butter)
  • 2 cup of water

Preparation:

  1. Drain the water and keep aside.
  2. Boil the Mung dal & keep aside.
  3. Heat the oil in a pan and fry the pre-boiled vegetables & keep aside.
  4. Heat the ghee in a pan, saute the bay leaf, cumin seeds, dried chilli, green chilli & stir well .
  5. Add sabudana, pre-fried vegetables, dal and tomato & mix well.
  6. Give the turmeric powder, salt & sugar according to taste & stir well.
  7. Add water and cook for 10 min in a low flame with cover.
  8. Sabudana kichuri is ready, serve it hot.
