 Dal makhani

Ingredients:

1 cup whole urad (whole black lentils)
3 tbsp rajma (kidney beans)
1 tsp cumin seeds (jeera)
2 green chilles, slit
2 cloves (lavang)
4 whole black pepper
1/2 dry coriander powder
1/2 tsp chili powder
1/2 tsp turmeric powder (haldi)
1 medium sized onion finely chopped
2 tomato finely chopped
1 tsp ginger-garlic paste
Salt to taste

For the garnish
2 tbsp chopped coriander
1 tbsp butter

Method: Soak the whole urad and rajma overnight. Drain and combine the dals & salt with 2 cups of water and pressure cook till the dals are overcooked. Grind cloves (lavang) and black pepper and keep it aside.
Heat the oil in a pan and add the cumin seeds. When the cumin seeds start spluttering , add the green chillies, grind cloves & cardamom, and saute them well. Add the chopped onion and fry it till it changes its color. Add chilli powder, turmeric powder, dry coriander powder and chopped tomato and cook till the oil separates from the tomato gravy.
Add the dal mixture, 1 cup of water and salt if required and cook on sim for 10 to 15 minutes. If you want you can add the cream and mix well. Serve hot garnished with the coriander and butter.

 
 
Pav Bhaji
 
Ingredients:
2 medium potato cut in cubes
2 cup cauliflower
1 cup green peas
1 capsicum
3 cups water
1 cup carrot
1 cup tomato paste
1 big onion paste
1.5 tsp ginger-garlic paste
1.5 tsp pav bhaji masala
1 tsp coriander powder
1 tsp red chili powder
1 tsp butter
2 green chillies finely chopped
2 tsp lemon juice
oil for frying
salt as per taste
Pav Buns
Lemon cut into slices for garnishing
finely chopped coriander leaves for garnishing

Method: Pressure cook all the veggies(carrot, potato,capsicum, green peas and cauliflower) with enough salt and water and keep aside.
Heat oil in a pan and add chopped green chillies, ginger-garlic paste and onion paste. Fry it for few min till it becomes brown in color. To this add red chili powder and tomato paste and fry for another two minutes.
Now add coriander powder, all boiled vegetables and pav bhaji masala. Cook this mixture for another 10 minutes on medium heat and mash the vegetables here n there. Add lemon juice and cook for another 2-3 minutes. In last add butter and stir for a while.
Have this hot bhaji with nicely roasted pav buns with onion rings and extra lemon slices :).

 
 

DAL SAAG


INGREDIENTS

250 gms Moong Dal
2 cups Spinach chopped
1/2 bunch Dill chopped
3 bunches Fenugreek chopped
1 tsp Salt
1 tsp Turmeric powder
1 tsp Red Chilily powder
1 tsp Ginger / Garlic
2 - 3 cups Water
COLUMN 2

1 Onion chopped
1 tsp Cummin seeds
8 Red Chillies
1 tsp Garlic crushed
1/4 cup Oil or Ghee
COLUMN 3
1/2 bunch Coriander leaves chopped
3 - 5 Green Chillies chopped


METHOD

Pick out any stones that might be in the dal.
Cook the dal with all the ingredients listed under column
1 till the dal is tender. Mash the dal lightly on the sides of
the pot with the back of a wooden spoon. In a small saucepan, heat
the oil and put in all the ingredients listed under column 2.
Stir for 1 - 2 minutes. Pour this over the dal and garnish with the
items listed under column 3. 
 
 

 

DAL GHOSHT


INGREDIENTS

Chana ki dal 1 cup
Ginger / garlic 2 tbsp
Imly juice 1/2 cup
Tomatoes finely chopped 4
Salt 1/2 tsp
Chilli powder 3 tsp
Oil 1/2 cup
Zeera powder 2 tsp
Green chilli 6 whole
Mutton 1/2 kg
Onions 2 medium


METHOD

Heat oil and fry onions till light golden and add in
mutton with ginger / garlic and fry well for 5 minutes.
Add in finely chopped tomatoes with salt,
zeera and chilli powder and bhuno well.
Then add in 2 cups of water and allow meat to get tender.
Boil dal together with 1 tsp haldi till tender.
Cool and blenderize and add to the cooked mutton mixture,
also add in imly juice, green chillies and put on dum for
10-15 minutes.
 
 
 
 

ALOO TIKKYA


INGREDIENTS

Potatoes 1 pao boiled and mashed
Salt 1 tsp
All spice 1/2 tsp
Oil 2 tbsp
Ginger / garlic 1 tsp
Bhuna zeera 1/2 tsp
Rai 1/2 tsp
Green chilly 6 grinded
Dhania 1/2 tsp
Curry pata chopped
Black pepper 1 tsp
Coriander leaves chopped
Egg 1
Bread crumbs


METHOD

Boil and mash potatoes. Mix everything well,
do baghar of rai and curry patta. Make kabab shape.
Dip in egg then roll in bread crumbs and shallow fry.
